Gluten Free Foods
Gluten is a protein found in wheat and other grains. Some people have gluten intolerance,
also known as celiac disease (or autoimmune disorder, also classified as a disease of malabsorption).
When people with celiac disease eat foods containing gluten, it is dangerous because their immune
system reacts by damaging the small intestine, which interferes with the absorption of nutrients from foods.
This can lead to loss of appetite, weight loss, and fatigue.
Over the long term, untreated celiac disease can lead to serious complications such as anemia,
osteoporosis, seizures, and even cancers of the intestines.
